Freezer meals

I like to make freezer meals once in awhile,
b/c it's just easy to pull stuff out and still have that homemade taste!
Here's a couple of my favorite recipies:
Ooey Gooey Mexican Chicken

*3 chicken breasts (cooked and shredded) (I use one big can)
*1 can cream of chicken
*1 can cream of mushroom
*1 cup salsa
*1 (15-ounce) drained and rinsed black beans
*1 (4-ounce) diced green chilies
*1 tsp. chili powder
*1 tsp. cumin
*¼ tsp. pepper
1 ½ cups shredded Monterey jack cheese

*Mix together and label and freeze
When ready to cook put in the crock pot and stir cheese in at the end.
Serve in tortillas or serve in a bowl with tortilla chips and sour cream.


Olive Garden Pasta E Fagioli Soup

1 lb. ground beef
1 med. Onion chopped
1 cup carrots slivered
1 cup celery diced
1 (28-ounce) can diced tomatoes
1 (15.5-ounce) can red kidney beans
1 (15.5-ounce) can white kidney beans
2 (14-ounce) cans beef stock
¾ tsp. Tabasco sauce
1 (26-ounce) spaghetti sauce
1/2 tsp. oregano
1 1/4 tsp. pepper
2 1/2 tsp. parsley
2 cups dry pasta shell macaroni or others (I like the short straw like salad roni pasta)

*Cook beef, onion, carrots, and celery together until beef is cooked and veggies are tender. Add all other ingredients EXCEPT noodles- mix well and freeze. When ready to serve, add dry noodles to soup mixture until noodles are tender and soup is hot.
Lasagna
2 lbs. ground beef
1/2 tsp. garlic salt
3 cans tomato sauce
1 can tomato paste
1 tsp. basil leaf
1 tsp. salt
1 tsp. sugar
1/2 pint sour cream
optional: gr.peppers, olives, mushrooms
*Cook beef until browned, add other ingredients
*start with a little sauce in the bottom of a pan then layer:
Noodles, meat, cheese about 3 times..
Freeze, when ready to eat defrost in fridge
and cook at 350 for 30 minutes or until hot in center.
